Hotel chain makes major cutbacks on butter

One of Sweden’s largest hotel groups, Strawberry, has decided to partially remove regular butter from much of its operations in Sweden and Finland, according to Atl.nu.

Yesterday, the agricultural news outlet Atl reported that Strawberry planned to completely stop using dairy butter across all of its hotel chains in Sweden and Finland — except for Clarion. An internal email, which Atl had access to, stated that plant-based fat would become the standard for cooking and for guests’ hotel breakfasts. The change was described as part of the company’s sustainability efforts, while also saving 4.3 million Swedish kronor for its Swedish operations.

However, after the news spread, Strawberry softened its stance. In a press release, the company clarified that butter will still be available, but plant-based fat will become the main alternative. The chosen replacement is produced by the Finnish company Eleplant.

In the press release, CEO Torgeir Silseth stated: – We are constantly introducing measures to improve both the guest experience and sustainability at our hotels. Replacing regular butter with a plant-based option was originally one of many steps toward achieving our ambitious climate goals. At the same time, we are feeling the effects of rising food prices just like our guests. When our internal tests show that Eleplant is a very good alternative in terms of taste, we are happy to give it a try.

The company also stated that butter will still be available for both cooking and for guests. “But we will replace it as the standard option where regular butter is not necessary for texture or taste,” Silseth said in the press release.
