Kaffeost granted protected designation of origin in the EU

Kaffeost (Coffee cheese) has now been granted Protected Designation of Origin (PDO) status. This cheese is served in pieces placed in hot coffee, where it adds texture and enhances the flavor of the cheese.

Kaffeost is a fresh cheese made from the milk of reindeer, goats, or cows. Both the production of the cheese and the sourcing of the milk must take place within a specific geographic area, which includes the provinces of Norrbotten, Västerbotten, Lapland, Jämtland, Härjedalen, and Ångermanland.

Kaffeost is made using whole milk. Rennet is added, and the milk is heated to separate the curd from the whey. Some of the whey is retained with the curd to achieve the right consistency. To improve shelf life, the cheese may be baked, salted, or smoked. To enjoy it, the cheese is cut into cubes and placed in hot coffee. The heat softens the cheese and allows it to absorb some of the coffee’s flavor.

The purpose of protected designations is to help producers of agricultural products and food highlight the quality of their products. These designations also provide consumers with trustworthy information about the product’s added value, quality, and origin. In addition, the protection supports traditional knowledge and local culinary craftsmanship.
