And the Flavour of the Year is…

Arla Pro in Sweden has announced that ‘The Flavour of the Year’ is ‘Fluffy’ – which is a multi sensorical experience.
The sensorical researcher Johan Swahn describe the flavour Fluffy as following:
– Fluffy is a complex sensorical experience, which gives unike dimensions in a dish. Fluffy works as a contrast to crispy and crunchy. Many people connect Fluffy with desserts, but eggdishes, sauces, purees, mushroms and bakery can also be Fluffy.
Elements of fluffyness contribute to create the right balance between different textures and tastes.
It is the fourth time in a row that Arla Pro select the Flavour of the Year through a unike research process, where 40.000 Instagram posts from some of the best restaurants, cooks and pasterychefs have been analyzed. 500.000 words have been researched – so have 200.000 hashtags. To get closer to the specific trends in Sweden 300 Swedish foodprofessionals were asked to give their input online.
The final selection was made by John Swahn and Arla Pro’s sensorical board.
